SUSU Postgraduate Received Scholarship from the Government of the Russian Federation

On the instruction of the President of Russia, the best students and postgraduates in our country will begin to receive a scholarship named after S.P. Korolev from September 1st. The scholarship is paid by the Government of the Russian Federation for significant achievements in engineering. According to the results of the competition, 10 scholarships were awarded for students and 10 for postgraduates. The 4th-year postgraduate student of the Department of Food Technology and Biotechnology of South Ural State University Kadi Ammar, the author of the work on "Hybrid Approaches in the Technology of Unique Matrices Based on Natural Raw Materials with Proven Bioactivity", was among the top ten.

Kadi Ammar investigated the bioactivity of components that are added to food products.

"We investigated curcumin and brown algae polysaccharides (fucoidan and sodium alginate) in an emulsion that is added to foods to enrich them and make them more wholesome to humans," Kadi says.

In addition, artificial intelligence methods were used in the work, with the help of which the results of the influence of enriched emulsions of various compositions were predicted in terms of their usefulness in enhancing the immune response in the human body.

Based on artificial intelligence methods, the researcher could select the optimal set of components for active compositions.

"In the study, we also considered the effect of products enriched with an active emulsion on post-COVID problems in the human body, whether they can be compensated," explains Irina Potoroko, academic adviser of the study. "We have found that the impact of these products is always positive. We have created a stable emulsion form for the placement of active ingredients in food products with the help of ultrasonic equipment. This is how food products of a new format with added utility are obtained."

Postgraduate Kadi Ammar intends to continue his scientific research and is already writing his doctoral dissertation.
