ISTiS Technologists Present Scientific Projects on Diet Improving

December 7, 2021 the Department of Production Technology and Catering Organization of the Institute of Sports, Tourism and Service participated in the All-Russian Research and Practical Conference "Improving the Diet of the Population and Quality and Safety of Culinary Products" (Moscow), dedicated to the memory of an Honoured Employee of Higher Education of the Russian Federation, Doctor of Sciences (Engineering), Professor Georgii Dubtsov.

During the conference, the head of the department, Professor Abduvali Toshev, presented one of the department’s current scientific projects: the use of rapeseed cake powder in healthy food products.

The task of their research is to enrich biscuits by adding a food additive of plant origin, which will increase the nutritional value of the product. The chosen food additive is rapeseed cake powder. The chemical composition of rapeseed cake powder is rich in macro and microelements, vitamins, minerals, proteins, fats and fibre, and its use is promising in a healthy diet.
